The book goes on to talk about the choice between supermarket bread and naturally fermented hearth bread and why anyone would go to the trouble of building a wood fired brick oven and bake in it.

Among the material covered the book discusses, bread grains and flours, baking, ovens and bread, preparing to build a masonry oven, materials and tools required, construction and oven management.
